Studies

  • McAirlaid’s Vac-Guard: Improving the Properties of Wet Aged Beef

    • VAC-Guard, an active absorbent pad from McAirlaid’s, underwent an extensive maturity study at DIL, the German Institute of Food Technologies. The study examined VAC-Guard’s impact on appearance, meat structure and sensory characteristics on wet-aged beef. The results, VAC-Guard scored better than conventional vacuum packaging in every respect.

      Once again, McAirlaid’s R&D department can claim to have set a new
      benchmark. The facts speak for themselves:

      •  Flavor: VAC-Guard was tested by DIL for three taste attributes: Sour,
          Metallic and Meaty or Beefy. The results left no room for doubt:
          VAC-Guard reduced sour taste while significantly improving meaty
          taste providing the most natural beef flavor.
      •  Smell: Acidic odor was much less noticeable when opening the
          package.
      •  Appearance: Meat no longer swims in its own juice, creating a more
          appetizing appearance.
      •  Handling: Since liquid is absorbed by the pad, no juices leak out when
          the package is opened allowing for a visually appealing product with
          maximum handling convenience.
